    White Pasta sauce with Zucchini

    Tonight, I threw together a sauce that came out pretty good:

    1/2 small onion finely chopped
    2 stalks celery cut small
    3 tablespoons chopped garlic
    1/4 lb bulk sausage (I used Jimmy Dean)
    2 or 3 samll zucchini peeled and chopped into bite sized pieces
    3 cups heavy whipping cream
    1 cup white wine
    3 tablespoons oregano
    3 tablespoons basil
    1 teaspoon salt
    Cajun seasoning blend to taste (or just go with Cayenne, black pepper and salt to taste)

    In a skillet, saute the vegetables (except zucchini) in olive oil for about 5 minutes. Add the sausage and brown it, and stir to break it up as it cooks. Add the zucchini and seasonings (go easy on the salt and pepper for now), and cook and stir another 3 minutes.
    Add the cream and wine. Cook over medium heat and stir until the liquid reduces and gets thick enough to coat the back of your spoon. Check for final spice level (I like a lot of Zing!). Serve over warm pasta of your choice.

    If I would have had some mushrooms on hand, I would have tossed them in when I put in the zucchini...
