Someone correct me if I'm wrong but I don't think you know that until you get there and pick up your sign and sail card.
Nothing told me untill I picked up my sail and sign card. My TA told me but they were wrong!

You can tell your preference but it's not certain you will get it. What I posted earlier is what I remember from our last 3 cruises with Carnival. I don't think it's changed. We've gotten our choice all 3 times let's hope that holds true for our upcoming cruise in May.
Yes, you definitely will not know until you get that sail and sign card upon boarding. If it is not the choice you originally made, you might try approaching the maitre D sometime before the first seating and see if you can get it changed. It works for many people, but then it may not work for some others. I quess it is a matter of how many change requests can be handled.
Supposedly the late seating is harder to get, but I have always requested it and got it (just got up and knocked on wood). The reason is that carnival tries to seat families with CHILDREN at the early seating. This doesn't mean that there aren't any at the later seating. I have a hunch that it being just my wife and me, and we have no children, and we book almost a year in advance we are easier to accommodate. (Now with that said, I hope I didn't jinx myself--I'll find out in June--if it ever comes).
Actually I think that only the dinner is now assinged seating. Breakfast and lunch are open, but they seat you as the table fills up.

from the conquest, destiny and inspiration we didn't know until we checked in at the ports. twice we did not get late seating as requested. we approached the matir de and we were changed. if you do change seating... you may get a less preferred table... farther away from the middle of the dinning room. our table partners once we changed said tthey just show up to any dinning room, whenever they feel like eating and they are accomodated as there always are empty tables. This is an option... but you loose a week of being spoiledby the wait staff as they learn your preferences on day one and then spoil you rotten!!!!!!
