Guinness Beef & Mushroom Stew

You will need the following:

1 lb stew beef
1 onion
1-3 garlic cloves
1 lb carrots
1 tsp thyme
1-2 bay leaves
1 c Guinness
1/2 beef broth or stock - do not use bouillon
1 T brown sugar
1 tsp salt
1 tsp black pepper
seasoned flour (salt, pepper, paprika) for dredging beef
olive oil

Coat stew beef in seasoned flour and brown really well in olive oil.

Place beef, carrots, onions, garlic, thyme, bay leaves, guinness, beef broth, brown sugar, salt & pepper in crock pot and cook on low for 6-8 hours.

When finished, remove all beef and veg from broth in crockpot and either thicken with a roux or our favorite is to add a splash of worcestershire sauce and mix in sour cream until creamy. Add all back to coat and serve on top of baked potato.

Very much like the Guiness stew recipe served at the Jurys Hotel in D.C.

One suggestion.... add parsnips to the recipe. Yummy!

Add Mushrooms,, or rename it Guinness Beef & No Mushroom Stew :duh:
