Crock Pot Maryâ€™s Roast Beef Prep: 20 min Cook: 7 hours 5 min 1 (3-lb) sirloin roast cut in half 2T vegetable oil 1 medium onion, chopped 2 garlic cloves, minced 1 cup brewed coffee Â¾ cup water, divided 1 beef bouillon cube 1tsp salt 2 tsp dried basil Â½ tsp coarsely ground pepper All purpose flour Garnish: fresh oregano sprig Brown all sides of roast on med/high heat in hot oil in a large skillet 5 min each side. Place roast in a slow cooker. Add onion and garlic to skillet and sautÃ© 2 min or until tender. Stir in coffee, Â½ cup water, bouillon cube and next three ingredients until blended. Transfer to the slow cooker. Cover and cook on low 6 to 7 hours, or until tender. Transfer roast to a serving dish. Measure drippings and return to slow cooker. For every cup of drippings, add 1T flour to the remaining Â¼ cup of water. Whisk to blend. Whisk into the drippings.
