1/2 cup diced bacon 4 medium potatoes, chopped 1/2 medium onion, chopped about 2 cups water 2 (12 ounces each) cans of creamed corn salt and pepper to taste 2 cups milk PREPARATION: In a large pot, sautÃƒÂ© bacon until browned and crisp; add onions and cook until opaque. Add the chopped potatoes to the pot! Add water, to just cover the onions and potatoes and cook until the potatoes are fork tender. Add the creamed corn to the pot. (Do not drain the potatoes first) Stir in milk and re-heat. Do not boil. Season with salt and pepper to taste. This is good even if you don't use the bacon. Just cook onions in a little melted margarine or butter until they are opaque. Then add the potatoes and continue per the recipe.
