[size=large] Morning Glory Breakfast Muffins[/size] 2 Ã‚Â½ C flour 1 Ã‚Â¼ C sugar 3 t ground cinnamon 2 t baking soda Ã‚Â½ t salt 3 eggs Ã‚Â¾ C applesauce Ã‚Â½ C vegetable oil 1 t vanilla 2 C grated carrots Ã‚Â½ C flaked coconut Ã‚Â½ C raisins Ã‚Â½ C chopped walnuts 1 medium tart apple, peeled & grated 1 can (8oz) crushed pineapple (drained) Preheat oven to 350* In a large bowl combine the flour, sugar, cinnamon, soda & salt. In another bowl combine the eggs, applesauce, oil and vanilla. Stir into the dry ingredients until just moistened (batter will be thick). Stir in carrots, apple, pineapple, coconut, raisins & nuts. Fill greased or paper lined muffin cups two-thirds full. Bake at 350* for 20-24 min. or until a toothpick comes out clean. Cool for 5 min. before removing from pans to wire racks. Makes 2 dozen.
