    Tortellini Salad

    1 package fresh cheese tortellini
    2 or green onions chopped
Basket of grape tomatoes (cut tomatoes in half)
    sliced black olives (optional)
    Pepperoni (optional)
    Italian or balsamic salad dressing.

Cook tortellini as directed and quickly cool under cold running water. Drain well and put in salad bowl with chopped onions, tomatoes and olives & small dices of pepperoni (if you choose to use). Toss with your favorite Italian or balsamic salad dressing.

YUM!!! Thanks for the share, this is a nice twist on having just a regular pasta salad. :)

I make tort salad ALL THE TIME if we are having guests to our lake cottage. You can do so many different things with it-one thing I do besides Denise's recipe is add a can or two of artichoke hearts that I have halved or quartered. I also buy a chunk of Monterey Jack and cube it and throw that in. Pepperoni is a must,IMHO. I buy the pre sliced pack of it. And I use Caesar dressing and put some parm cheese out for anyone who wants that. ;)
