What is the earliest you can go on the ship?

I know about at least 2 hours prior to set sail if you didn't do the online check-in and at least 1 hour if you did.
I want to know how early can you get on the ship? If you set sail at 5:00pm can you get on at 10am?

You cannot board until the ship has been cleared, which means all the passengers from the last cruise have disembarked. Typically boarding begins around noon. It is not reasonable to expect boarding to begin prior to 11:30am. However, in rare cases boarding has begun as early as 11:00am.

that is about right, normally they start boarding between 11:30 and noon. I suggest you get to the pier about 11am. It will put you closer to the front. Embarkation usually moves really fast after it opens up. Cetainly it is better than in the olden days: I don't even want to think about what embarkation and debarkation was like back in the 80s and 90s.
