What to do with the kids, Western Carribean?

My family will be taking a cruise at the end of November. My children will be 5 and 3 years old. I plan on doing the falls in Jamaica, definately stingray city in the Caymans, but not sure which place to do in Cozumel, Chankanaab Park or the the Playa Sol Beach Break. My husband and I want our children to enjoy water sports, snorkel in shallow water & actually see some fish! Both sound great but which one would be better for children? Also, please add any other recommendations you might have for any of these ports that would be good for children. Don't forget about me and hubby, we thoroughly enjoy a partying good time too! Have not been to Playa del sol but we took our kids to Chankanaab in Nov. They had a ball. There is a very shallow area(although they will not see fish in this area. The beach entrance to snorkling is probably over their heads but if they wear life vests it should be very safe if the water is calm. The fish are visible the minute you get in the water.
There also was a life guard present. There are parrots and dolphins and they have sea lion shows although I believe they charge for the shows. Beaches also have plenty of shade.
